Pancit Palabok is a famous and important dish at every gathering, party, and birthday. It is topped with delicious sauces that can feed your taste buds and remove cravings. Despite many other palaboks in the Philippines, Pancit Palabok is considered a trademark all over the Philippines.
1 cup boiled pork belly, (sliced into small pieces)
2 pieces fried firm tofu, (sliced into cubes)
1/2 cup crushed chicharrón
2 hard-boiled eggs, sliced
1/4 cup tinapa flakes (smoked fish)
1/4 cup chopped green onions (scallions)
1/4 cup fried garlic bits
Lemon or calamansi wedges, for serving
Instructions/Procedure
Are you ready? Let’s start making Palabok Ala Mang Inasal.
Step 1:Prepare Noodles
Take a large container or mixing bowl, add water and soak the bihon for about 15 minutes until absorbs water and softens.
Step 2: Prepare Sauce
Once the bihon is soaked, you are ready to prepare the sauce.
Heat the cooking oil in a pan or pot. Once the oil is hot, add the ground pork and cook until it turns brown about 5-7 minutes.
Next, dilute the annatto powder in pork broth and ensure it is mixed well. (If you are using anatto seeds, soak them first in 3 tbsp water to bring out the colour)
Pour this diluted pork broth into a pot and bring it to a boil.
Once it boils, add the shrimp cubes if you are using fresh shrimp then you can skip adding shrimp cubes. Mix it for about 3 minutes to melt the cube.
Once the shrimp cube is dissolved, add the flour (it makes the sauce thicker) gradually while mixing the liquid.
Make sure to continuously stir it so as to not let the flour condense. Then add the fish sauce and ground black peppers and stir well.
Let it cook until the sauce reaches your desired thickness.
Once it’s ready, set it aside and cook the noodles.
Step 3: Cook the Noodles
Now, drain the bihon, boil some water and put the soaked bihon in that water leave it for about 1 minute.
After that, remove it from the water, drain it well, and transfer it to another container. You can use a strainer for this process.
Step 4: Prepare the Dish
After cooking the bihon, transfer it to the serving plate, then top it with the sauce.
After adding sauce, top with other ingredients. Start with the boiled pork and shrimp, then add the fried tofu (sliced thinly into small cubes).
Next, add the tinapa flakes. This adds additional flavour to our pancit palabok. Then add the chicharron, sliced boiled eggs and scallions. You can also add a little fried garlic on top.
Step 5: Serving
Serve with lemon or calamansi wedges on the side.
Now your plate is ready with Pancit Palabok to serve your loved ones.
